Sheet pan dinners are all the rage in my house right now. We love how easy it is to throw everything on a baking sheet and not have to dirty too many dishes. I don’t know what it is, but I really hate making side dishes. The main course doesn’t bother me, but something about side dishes drives me nuts. It hasn’t always been this way, it’s probably because our kitchen is so small. The thought of dirtying more pots and pans and having to hand wash them all overwhelms me. That’s why I love making sheet pan dinners, soup, quiche, anything that doesn’t dirty a ton of pots and pans.
Chicken Sausage
I love using Applegate’s Organic Chicken & Apple Chicken Sausage for this sheet pan dinner recipe, it pairs well with the apple in the recipe. Applegate also has fire roasted red pepper chicken sausage, spinach and feta chicken sausage and sweet Italian chicken sausage. Any of these would work great for this recipe. Applegate’s meat is humanely raised; they don’t use any antibiotics, fillers, GMO ingredients, chemical nitrates or nitrites, artificial ingredients or preservatives. Applegate brand products are pretty easy to find and you can find their chicken and apple chicken sausage in most stores. I haven’t seen the other flavors very often though.
If you can’t find Applegate, Bilinski’s is a great brand. However, I have never seen it at any grocery stores near me. Whole Foods Market brand is also a good option. I have also gotten Aidells before, it isn’t organic, but it’s better than a lot of other options and it’s available at Costco.
Vegetables
You can use whatever vegetables you have on hand for this sheet pan dinner, but you may have to adjust the cook time. Vegetables that work great with this recipe are- brussel sprouts, potatoes, sweet potatoes, bell peppers, broccoli, zucchini, cauliflower, onion, butternut squash, asparagus, green beans, peas and carrots. I also like to add apple, it didn’t sound appetizing to me at first, but I tried it and loved it!
Healthy & Easy Chicken Sausage Sheet Pan Dinner
Ingredients
- 12 oz Chicken Sausage or 4 links- cut into 1/2 in. slices
- 1 Sweet Potato- peeled, sliced 1/2 in. cubes
- 1 Small Zucchini- chopped 1/2 in. pieces
- 1 Bell Pepper- stem and seeds removed, chopped into 1/2 in. bites
- 1 Head Broccoli- cut into 1/2 in. pieces
- 1 Apple- seeds removed and cut into 1/2 in. chunks
- 2 Tbsp. Avocado Oil or Olive Oil
- 1/2 tsp. Sea Salt
- 1/4 tsp. Black Pepper
Instructions
- Preheat oven to 425°F.
- Cut chicken sausage and veggies.
- Put chicken sausage, veggies, avocado oil, salt and pepper in large bowl and toss to coat sausage and veggies.
- Spread out on baking sheet (you can use parchment paper for easy clean up).
- Bake for 15 minutes, pull out of the oven and toss the veggies. Bake for an additional 10-15 minutes.
- Serve immediately by itself or on a bed of rice.
