Creamy Almond Chia Seed Pudding (Dairy & Refined Sugar Free)

I’ve been eating chia seed pudding for years, it is so filling and tastes like dessert. Not to mention all the nutrients the chia seed superfood is packed with. It makes a great breakfast, but it also makes a great treat for the kiddos, or yourself! There are so many different ingredients and toppings you can add to make it your own.

The Power Of Chia Seeds

Yes, these are the same chia seeds that you put on your ch-ch-ch-chia pet when you were a kid! Do they still make those? That would be a fun activity for my daughter. Anyway, chia seeds are packed full of omega 3s, antioxidants, protein, fiber, iron and zinc, making them an amazing superfood. If you avoid dairy, like myself, you can get all your calcium, protein, magnesium and phosphorus from a dose of these little guys. When compared to dairy, gram for gram, chia seeds actually have more calcium. Making them great for bone health.

You can really add these superfood seeds to anything as they don’t have a flavor. I like to add them to smoothies, oatmeal, baked goods and of course, make chia seed pudding. I have even used them to make jam. Who would’ve thought we would get more out of eating chia seeds than slathering them on a piece of porcelain and watching them grow! Pudding Toppings

The topping potentials for chia seed pudding are endless. I really love almonds and strawberries or raspberries on mine. You could also try any kind of nuts, cinnamon, granola (I love Purely Elizabeth granola), jam/puréed fruit, honey, nut butter, shredded coconut, fresh fruit, chocolate chips, chocolate sauce, cacao nibs, cereal, etc. Let me know what you come up with!

Chia Seed Pudding

Total Time 2 hours 5 minutes

Ingredients

  • 3 Tbsp. chia seeds
  • ¾ cup of coconut milk (I like Aroy-D)
  • 1 Tbsp. honey or maple syrup
  • 3/4 tsp almond extract (vanilla works too)
  • Toppings- cinnamon, sliced almonds, berries, chocolate chips, granola etc.

Instructions

  1. Place all ingredients in jar and mix well.
  2. Put the lid on and refrigerate at least 2 hours, preferably overnight.
  3. When ready, top with your favorite toppings and enjoy!
