Easy Homemade Lava Flow Popsicles- Dairy & Refined Sugar Free

We got over a week of sunny weather in the Seattle area and I am ready for popsicle season. It might be raining right now, but who cares. The sun should be back in a month or two, HA! Sometimes I like to pretend I am somewhere sunny and make myself a fancy cocktail. While I am actually on vacation though, I am a total sucker for a good lava flow cocktail. They always have dairy and tons of refined sugar though. Taylen and I started making these homemade popsicles last year and although they don’t have rum, they make me feel like I am sitting on a beach in Hawaii. Until I realize that it’s cloudy, raining and I am freezing…

Seattle weather jokes aside, we do have the most amazing summers in the Pacific Northwest and I wouldn’t trade our summers for anything. The little glimpses of summer that we get in the spring give us all hope that we can start pulling out the shorts, tank tops and sunscreen. That’s why I am pulling out the popsicle molds and getting ready.

What is a Lava Flow?

If you have been to Hawaii, chances are you’ve tried this blended tropical cocktail. It combines a piña colada with strawberry puree and creates a really pretty drink. Piña colada has coconut (coconut milk or cream of coconut), rum and pineapple juice and is usually blended with ice. It is poured over a strawberry purée which usually has strawberries, sugar and rum. The strawberry goes up the sides as the piña colada mix is poured in, resulting in the eye catching drink below. These lava flow popsicles however, are kid friendly and do not include rum, feel free to add some if you would like! You can swap out the water or orange juice in the strawberry purée for some rum.

Popsicle Molds

Let’s talk popsicle molds. There are SO many different kinds out there. However, I recommend avoiding the plastic ones. Not only do they not last long, but the plastic leaches into your popsicles and you end up ingesting it. No thank you! If you want to stay away from the plastic, look for silicone or stainless steel popsicle molds. We have these Ecozoi Stainless Steel Ice Popsicle Molds and Rack and we love them. Blender

For this recipe you are going to need a blender or food processor. We have a Blendtec blender that we love and use all the time. The Blendtec has this really cool twister jar that is perfect for nice cream or for puréeing the dates in my Healthy Detox Brownie recipe. A good blender can be expensive, so if that’s a concern, check out their refurbished blenders. Mine is refurbished, we have had it for 3 years and we haven’t had a single problem with it. Yield: 6 popsicles

Easy Homemade Lava Flow Popsicles

Prep Time 20 minutes
Additional Time 5 hours
Total Time 5 hours 20 minutes

Ingredients

  • 2 cups of pineapple chunks (fresh or frozen)
  • 3/4 cup of coconut milk, preferably full fat. I like Aroy-D Coconut Milk (link below).
  • 1 cup of strawberries (fresh or frozen)
  • 3/4 cup of water or orange juice
  • 1 Tbsp honey (optional)

Instructions

  1. Put pineapple and coconut milk (I love Aroy-D coconut milk) in blender, blend until smooth. Transfer to liquid measuring cup with pour spot or pitcher.
  2. Put strawberries, water or OJ and honey in blender. Blend until smooth. If you are using fresh strawberries, you can use less water.
  3. Alternate pouring each flavor into the popsicle mold to achieve the layering effect.
  4. Freeze at least five hours.

Notes

Nutritional value based on the use of honey and water instead of orange juice.
