The holiday season is in full swing and Christmas is just around the corner! What better way to spoil your family and friends than with some peppermint fudge? The best about this fudge, is that you don’t have to feel guilty indulging a little, because it’s sweetened with maple syrup and coconut sugar! My parents always made huge batches of fudge every year to give as gifts, so I have a soft spot in my heart for good gooey fudge and this recipe fills it. You can skip the peppermint extract and make this as normal fudge, you can even add nuts, or whatever toppings you want.
Hu Chocolate Gems
What is absolutely necessary in every fudge recipe? You guessed it, chocolate! My very favorite chocolate chips are Hu Kitchen dark chocolate gems. The only ingredients are organic cacao, unrefined organic coconut sugar and organic fair-trade cocoa butter. Their chocolate is made with simple ingredients that they “obsessively vet”. All Hu’s chocolate is paleo, vegan, organic, soy free, refined sugar free, with no emulsifiers or soy lecithin. Just clean ingredients! Peppermint Fudge- Vegan & Refined Sugar Free
Ingredients
Instructions
- Heat coconut cream and maple syrup in sauce pan, simmer for 10 minutes on low.
- Add coconut oil, vanilla extract, peppermint extract and chocolate chips. Stir until the chocolate chips are melted and combined.
- Line 8in x 8in pan with parchment paper.
- Pour chocolate mixture in pan and top with crushed candy cane.
- Refrigerate until firm- about 3 hours to overnight. You can expedite this by putting it in the freezer.
