It’s blueberry season in the Pacific Northwest! We’ve already been blueberry picking once and we plan to go again next week. What do we do with all the blueberries we pick though? I’m glad you asked! We’ve been making these blueberry mint popsicles and my Banana Oat Blender Muffins with blueberries and pecans. This recipe is simple, refreshing and would be amazing with any kind of berries. No mint at your house? No problem, try it without!
Popsicle Molds
There are SO many different kinds of popsicle molds out there. However, I recommend avoiding the plastic ones. Not only do they not last long, but the plastic leaches into your popsicles and you ingest it. If you want to stay away from the plastic, look for silicone or stainless steel popsicle molds. We have the round Ecozoi Stainless Steel Popsicle Molds, but this set is currently unavailable. I will update with a link when they come back in stock. Ecozoi does have other popsicles molds though, check out the flat ones here. This popsicle mold set is made from food grade stainless steel, the sticks are untreated bamboo and reusable. Plus they ship in zero waste packaging, absolutely no plastic! Ecozoi sells several different styles of popsicles molds including mini size. Blender
For this recipe you are going to need a blender or food processor. We have a Blendtec blender that we love and use all the time. The Blendtec has this really cool twister jar that is perfect for nice cream or for puréeing the dates in my Healthy Detox Brownie recipe. A good blender can be expensive, so if that’s a concern, check out their refurbished blenders. Mine is refurbished, we have had it for 3 years and we haven’t had a single problem with it. Great Recipe For Kids & Adults
My daughter is obsessed with blueberries so she was very excited about these blueberry mint popsicles. She loves them! You could really use any kind of berry you want in them. I will be trying them with blackberries soon. Adding booze to these blueberry mint popsicles is always an option too. Just swap out the coconut milk for vodka, rum or gin. If you do rum, its a blueberry mojito popsicle. Yum!

Blueberry Mint Popsicles Sweetened with Honey
Ingredients
- 2 cups organic blueberries (fresh or frozen)
- 1/2 cup coconut milk (water works too)
- 1/4 cup honey
- 1 lime
- 20 mint leaves
Instructions
- Combine coconut milk, juice of one lime, honey and mint leaves in medium saucepan.
- Heat to a simmer. Let simmer for a couple minutes while stirring to make sure the honey dissolves. The mixture will be a light tan color from the honey.
- Remove from heat and let cool to room temperature.
- After coconut mixture is cool, strain mint leaves and pour mixture into blender. Add blueberries and blend until smooth.
- Pour into 6 popsicle molds, leaving room for the stick to be added. Place lids on top and put sticks through the hole.
- Freeze for at least 4-5 hours. Enjoy!
